My favorite fast and easy dinner.
This is one of my go-to meals for when I have little to no time to cook dinner. I love it because I usually have all of the ingredients on hand, only one of the ingredients needs to be cooked, and well.. its delicious.
Its as simple as grilling some chicken, making my killer avocado sauce, and chopping up the toppings.

1 tomato

1/4 of a cabbage (white or purple)

pickled onions (recipe here)

You will need:

tortillas
for the chicken

2 chicken breasts

1/2 tbsp slat
-
1/2 tbsp Trader Joe’s chile lime seasoning

avocado oil (enough to coat chicken)

juice of half a lime
for the avocado sauce

1/2 avocado
-
1/3 cup sour cream
-
1/4 cup mayo
-
juice of half a lime
-
sprinkle of Trader Joe’s chile lime
seasoning
Instructions

Prepare chicken – if the chicken breast is thick, slice it in half to make it into 4 thinner pieces. Marinate the chicken breast with salt, Trader Joe’s chile lime seasoning, avocado oil, and the juice of half a lime. Let it sit for at least 30 min before grilling it. (tip: always cook chicken at high temperature to avoid dryness)

Avocado sauce – place the avocado, sour cream, mayo, lime juice, and sprinkle of Trader Joe’s chile lime seasoning in a taller glass cylinder and blend it all together using a hand blender. Let it refrigerate until you are ready to use it.

For the toppings – chop up the tomatoes, slice the cabbage, and take out the pickled onions that were prepared ahead of time (recipe here).
